Interestingly (and sadly) the only coffee consumed by the Burkinabé is Nescafé instant coffee. This is sad because neighbouring countries Côte d'Ivoire and Ghana both grow fabulous coffee, but none of these countries consume West African coffee. As one man explained to me when I asked why they don't drink their own, awesome, coffee: "Its all for export, we grow the beans, Europe buys them and sells them back to us far too expensive so all we can drink is this imported instant stuff." Nescafé is what you will receive if you order coffee in any restaurant or hotel. The same rings true for chocolate. They grow it, but don't eat it.

Hi Eric, I had a great idea for a blog a few months ago, but now I see my idea wasn't so original after all! I've been undertaking more or less the same culinary adventure as you, and also been having a lot of fun doing it. Just wanted to give a fellow world food blogger a shout-out. We might overlap now and then, but hopefully our different styles and tastes makes it a case of "the more, the merrier!"

http://latinfood.about.com/od/beginnerrecipes/ss/sofritosteps.htm Hi Mary, try this link. I used to have a recipe for it on my site, but I think it was before I switched to wordpress...

So happy that you like the site and please keep me posted on your successes. Platano BTW is one of my favorite starches in latin american cuisine. Also African dishes often use plantains...

Hi Eric, I do want to try this recipe. It sounds delicious. First of all, I'm not the worlds greatest cook, so please tell me what sofrito sauce is, and where do I find it.
When I was in California, I had a good Cuban friend named Merta, that I have lost contact with. She used to make Platano, (I'm not sure of the spelling), it was so good. Do you have the recipe for that? Enjoy your website!! Mary

Hi! I got the link to your blog from Sarah's blog (What's Cooking in Your World?)...I wanted to touch base because I am cooking my way around the world, too, and I wanted to meet up with people who are doing a similar project. My blog is located at http://lifeinanarv.blogspot.com and my project is called Around the World in an RV. I, initially, was only going to cook from 52 countries, but the fascination with different cultures was too strong, so I am about to embark on my second year after a 5 or so month break. I do all of this from the galley of my 21-foot fifth wheel with a $20 per week budget. Please get in touch with me because I would love to meet others who share the passion of world cuisine.
Thanks,
Laurrie Piland....Life in an RV

Eric,
Love the website. Just found it tonight. I hope you are still going strong. I just dropped by to note that the cazuela you made is not a typical Chilean Cazuela. The ingredients are correct but in Chile rather than cube and dice the vegetables they just put them in whole. If you have 4 people eating you get 4 potatoes (1 per bowl) 2 corn cobs cut in half (1 per bowl) and the acorn squash would be a big chunk per bowl.. The chicken (or other meat) would not be cubed rather bone-in leg or breast would be used. Other than that the rest of the ingredients would be chopped and cubed. My wife is from Chile and I have lived there for some 3 years and this would be your typical Cazuela. Yours on the other hand would be more like a Carbonara, another Chilean soup or stew. Not hating just letting you know how a traditional Cazuela would be made.
I hope you are still going with this as I have loved browsing your recipes. Good luck

Eric, I happened to be looking up national dishes, and was led straight to your blog. It turns out you and I have similar goals, that is, to try national dishes from all over the world. I have a family of six and think this is a great, fun way to get my family to experience other cultures right in our own home. Thank you, I'm sure I will continue to enjoy your blog.

Hi Eric,
What a wonderful site you have here. Your articles are very informative and articulate.
I too have been attempting to cook the national dishes of the world (http://globalgastronomicjourney.blogspot.com/), and your blog serves as something of an inspiration.
I noticed that many people are cooking cuisines of the world, so to set myself apart, I film my "attempts" and then upload the results. Have a look if you can, any tips would be most appreciated.
Being an amateur cook (but massive foodie) I started cooking to increase my cooking skill but also for adventure.
Unfortunately, I don't have your flair or expertise, but am thoroughly enjoying the ride. Keep up the excellent work, I'll be reading!

Wonderfully explained, thank you for the funny way to put it. "post-apocalyptic blob" well, tomorrow I will try them as I need to patiently wait for the filling to cool in the fridge overnigth.
I have been my whole life in the knowledge that the saltenas were Peruvian, as I have always ate them in Arequipa-Peru. If in fact, they are Bolivian invention. Then this was one of the best inventions our neighbours have done! Thanks again.
